For what it's worth my temps are at 213-226 deg. at 75MPH with outside temps of 90+ degrees. I have a Fluidyne radiator and 180 thermostat, but I also have a MONSTER FMIC that blocks everything. I will be putting in some high flow SPAL fans soon to hopefully get my temps down to 190-210 deg. That way when the SO. Cal. temps get to 115 deg I won't overheat. Using my AC is out of the question till I get my temps under control. I may be using heat wrap soon as well since my lower heat shield is off (Tial 40mm in the way).
 
To those confused about thermostat operation, here's how they work:

The water pump pushes water through the engine block. When the thermostat is closed, the water just goes from the pump to the block, and back again. This keeps happening until the block has heated the water up to the temperature the thermostat is rated for (180 degrees, or whatever)

When the water reaches that temp, the thermostat opens, diverting the water flow from the block-pump loop into the radiator where the water is cooled. This keeps the water at about the temperature that the thermostat is rated for, because if the water gets hotter, the thermostat opens more, and more water goes to the radiator, where it gets cooled.

Getting a cooler thermostat will open sooner, and divert water into the radiator when the temperature is still lower, thus maintaining a lower average water temperature.

If you are having overheating problems due to lack of airflow to the radiator, getting a colder rated thermostat isn't going to help you at all, not one bit, because even though you're diverting water to the radiator sooner, if the radiator can't do its job of cooling the water down, then your temperatures will continue to rise.

If you're having this problem, you either need to invest in a better radiator, or get better/cooler airflow to the radiator you have (the bigger the FMIC, and the more power your car makes, the harder it is to properly cool your car)

Does anyone happen to know what the CFM rating on the stock fans are? My temps are better after the Fluidyne, but I could still use some more cooling. Since the radiator is blocked by the FMIC I was hoping to throw in a SPAL 13" that flows 1710cfm. It sounds like a great idea unless the stock passenger fan already flows that much. Any guess or numbers?
 
Not even close. My 11 AC spal fan flows 870 CFM and it's stronger than the stock Radiator fan.
