If you didn't burp the system while filling it then you'll need to refill. What I usually do is fill it, let it run and fill during the run. Then put the cap on, let it get hot, then let it cool down and refill then I KNOW my system is full.
Edit: the reason I do this is because if you just fill it to the top before starting the car, or even when you dont let it run long enough, there is still air in the system and it WILL overheat, no matter what you think. There will not be enough fluid and it'll toast.
 
Check for air pockets like the 2 above mentioned. All coolant does is raise the boiling point of water, lubricate the water pump, and lower the temperature for the water to freeze.
Water is what cools the motor, not the antifreeze. So basically, more water the better. I wouldn't suggest a straight 100% water but if you do, mix in some antifreeze and water wetter into the mix.

+10 on the water wetter. Me and my dad used to run that in the race car we worked on out here at the local dirt track. In the late model class(their motors have more horse that NASCAR motors). +10 on burping the system. There is a pretty nifty tool that you put where the radiator cap goes then hook it up to a air compressor and the way it works it sucks the air completely out of the system and puts it into a vacuum and then you take the air hose off and then put the hose connector on it and put it in your bucket of water/antifreeze and open the little valve and then the vacuum in the system actually pulls the mix in and leaves no air pockets its called an Airlift is the brand and its called a airlift though.
 
if you have not did a whole system flush on your coolant. do it now. I found a small silicon piece that was blocking the water passage in the thermostate housing. do a new system flush and replace the water pump( if you have not did so) than it will be fine.
