Yesterday I took off one of my radiator fans to give myself more room to change the o2 housing. When I took it off I notice that the center looks like it exploded. I took it off and have been running my car with one fan and the car seems to run at a normal temp. Can I continue to run my car with one fan or should I buy another one?

Sounds bad but i run my car with none right now and i have never had any problems but i dont stop moving much im looking to get a slimline push fan to mount infront of my rad where the condensor was so yes 1 fan should be fine just as always keep an eye on your gages.

I ran one stock fan for a long time, I also have an aluminum radiator but never over heated once

As was 1 of the fan is the engine cooling fan and the other is the a/c condensor fan. So as long as the fan you have left is the enigne cooling fan and you don't use the a/c you will be fine.

So until I get the second fan I shouldn't run the a/c? I ran the a/c before I posted and the car was still running at a normal temp

Replace it if you still have A/C. A used one can be had for cheap. But a lot of people with big turbos, or external gates run one fan. It does the trick most of the time. The stock fans move a ton of air.

I've seen many. I don't quite understand where you're trying to go here. But I dont really care. Back to the OPs question. Yes, you will be fine. You need that other fan for A/C though.
