When I start my car, the idle will go up to about 1,000 then drop to about 100-200 then go back to the normal idle to 750-1,000ish.

It's only when I start the car I notice the idle will drop that low. Did exp it while shifting once, I went to go coast to a light, put it in Neutral and the car stalled, so it seems like it only happens once in awhile.

Just replaced the IAC with the one from dsmisc.com. I'm thinking maybe its the FIAV.

I would guess a vacuum leak.
Go under the hood and check and make sure everything is still connected properly (thing you may have recently disconnected)

vacuum leaks depending where they are can and cannot be consistent. for example say you have a intake manifold leak and a very high milage and gunk everywhere the vacuum leak could half the time be closed by the sticky gunk and then maybe open and close again. Vacuum leaks are erratic and hard to trace somtimes. Just double check all your vacuum lines coming from the throttle body and intake manifold, and if its a turbo car make sure you dont have a boost leak

When checking your vacuum lines make sure none of them are cracked. Sometimes a crack will open and close when ever it wants to and cause a vacuum leak.
