How do I wire my boost gauge and wideband so I can log it with my dsmlink v3?

So I can use the Rear O2 (ECU Pin 75) for the wideband and MDP (ECU Pin 73) for the boost gauge?

Yes, as long as you don't need them for emissions purposes.

My boost gauge wires are:
red - 12v Constant
orange - 12v Ignition
white - light source
black - neg ground

My wideband wires has a bunch of colour wires.

Which wires should I use for the ecu?

Can you provide a link to the boost gauge you have?

It looks like the yellow wire on the AFX is the 0-5v analog output signal wire.

Hmm, that doesn't really help either. What color wires do you have on the harness coming from the sensor to the gauge? One of those wires is what you'll need to tap into. The PDF does not say anything about this harness though.

The harness that connects to the sensor has three colours black, white & red.

If you have a way to test the sensor after it's hooked up with a multimeter (put air into the vacuum hose and watch the multimeter), I'd say to try that. Prod either the red or white wires is my guess as to which the source wire would be.
