Popped off my tranny and this is what the inside of my bell housing looks like.. how is there so much grease and fluid inside there? what could have leaked to cause this?

First off... Where did your ouput shaft go? Should be held in the trans with a steel ball. If the shaft was moving back and forth however it wanted oil could have gotten past the seal and created the mess.

Two other seals could cause this:

The mainshaft seal behind the throwout bearing (trans has to be taken apart to replace)

The rear main seal on the engine itself
 
Is it the first time it's been off? I might expect something like this on a 21 year old car. Likely an old seal slowly letting that gunk into the housing.
Is it wet, or any other signs of it being fresh?

I took the output shaft out. it came out with my transfer case, thats the whole reason i took the the tranny off, to replace the steel ball. i think that the output shaft was sliding back and forth because i was getting a leak from that area when it was on. do you think that is the sole cause of all the grease or could it be another seal too? im gonna replace the rear main seal while trannys off.
 
if it slid out with the transfer case i would say that it is a very good possiblity that this is the reason you have the wet oily look.

also check the rear main seal while you have the tranny off. may be a good time to go ahead and replace it if it hasnt been done yet.
 
Agreed with above statements. While the tranny is off, replace all the seals, fulcrum ball, fork, T.O. bearing, speedo o-ring, and take a look at the clutch to see how worn it is. If its out now, best to do as much maintenance as possible to keep from having to pull it again in my eyes.
