Is there any difference in performance between something like a $1000 greddy intercooler and a $200 mishimoto intercooler?

minimal difference. The biggest difference is that amount of money left in your wallet.

There are better intercoolers out there, that are cheaper.

I is long route and the other is super long route. The Greddy is a waste of money IMO. It's like spending money on a Nike "running" shoe because it says Nike on it. Meanwhile you could get a properly fitted and better designed New Balance true running shoe for same price or less.

For $800-$1000, and I would look into an ETS setup instead of the Greddy.

Not all cores are equal in design, and manufacturing, and efficiency.
