Engine sitting, rotating crank good enough??

I am going to be sending out my Transmission for service and trying to prepare for worst case scenario of a long turn around. It could be up to 2 months before I start the car again. (injury to finger)

Question is: Would rotating my crank be sufficent enough in keeping bottom end in good lubricating order? Do I need to even worry about this as it's not a freshly built motor and has been broken in?

If the engine has been ran before (not a fresh build), then it would be fine just sitting. If you want to keep everything fresh, pull the injector wires and crank it over a few times every week or so. Hell, I'd probably start it up every so often if the engine was still in the car. But I see no issues with letting the engine sit for a few weeks.

I was thinking about that except I don't have starter connected. Motor has 700 miles and was properly broken in.

As long as the engine is sealed up than it will be fine. You won't be able to crank it over with the starter without a transmission in it.
