Okay, so my 95 GST is currently in the works right now, me and my boys here are kinda at a loss on one thing.

When we take the car out for a test run, as soon as I let off the throttle the dash panel dims out. now today were gonna be doing a big run through on any other major problems, but i would like to know if ya'll can tell me when to start looking. Thanks.

The alternators are known to die on a regular basis. Start with checking voltage, then the battery then the wiring.

As said already, check your alternator and battery. Take them to autozone for testing or test the voltages yourself.
