How do I reset the settings?

Just go into the Fuel tab and bring the sliders down to 0. Or right click in the slider area and click "Zero all adjustments"

You mean because the maf is not calibrated or because I dont have a map sensor?

Everything the ECU does is based on how much airflow it thinks is going into the engine. If the MAF isn't reporting accurate data (due to different IC piping, cams, hacked MAFs, etc etc etc), then the ECU isn't going to be adding the right amount of fuel...and everything else derived from that airflow data is going to be inaccurate as well.

So in order to understand what is going on with the tune... you need accurate fuel system information and at least one known point of reference; either a wideband signal so you know the true AFR and can work backwards to calibrate airflow, or a logged boost source to compare with the estimated airflow, which can also then be used to calibrate the MAF signal.

Without either a wideband or MAP (boost) sensor, getting a tune that makes sense is a lot more difficult. It can be done, but it takes more trial and error and a bit of luck...unless you are just one of those guys that can tune these things in their sleep :)
 
BoostEst still reads up to 30psi when the boost gauge only goes up to no more than 23psi.

Turn the bloomin boost down! Run off of WG pressure if need be.
