Couple tech related questions

Ok, I've got a couple questions.
My car when sitting at a stop light, will seem to dump rpms, it idles at around 600 - 700, and then it'll suddenly drop below 500 for a second, then right back up.

I've heard that it could be a vacuum leak? or injectors maybe?
when you stomp on it from the light, there's no jerk, and chopping like a bad spark plug would do.

Any ideas?

Have you done a boost leak test and a tune up? That would be the best place to start.

I have a 95 Talon n/t so I don't have a turbo.
In order to get a tune up done, where do I have to bring my car? Can any mechanic shop do it? or can only a dealership do it?

you should be able to take it anywhere for a tune up. its pretty much just plugs, wires, and a few other things..if you wanted to get it TUNED, then youd have to take it to a specific shop that actually does that

pull the plugs out check their condition. compare them to the ones on the back page in your Haynes repair manual. Gap them right before you put them back in. If they look bad replace them with what ever ones are the best for our cars. I think NKG. Do wires too.
check all your vaccum lines. theres a sticker under the hood that hass a list or where they should all go.
Run some fuel injector cleaner too. If that doesnt work i would go to the fuel filter next.
Its hard to say what the problem is without driving it, hearing it, feeling it and so on. But do the plugs, wires, vaccum lines and injector cleaner.

Do you still have your EGR hooked up? If not, try hooking it back up to see if that is the issue.

A vacuum leak on a 2gnt will make it rev higher, not lower. Rule that out.

Try checking/cleaning/replacing your MAP, and clean your IAC.

I'm gonna try some fuel injector cleaner tonight I think.
And I think I'm gonna replace my fuel filter too while I'm at it.
I just got some NGK Iridium 9s about 5 months ago, so I really hope that's not it, and I'm pretty sure i t's not because when I had the old injectors in there, it would sputter on take off too but it doesn't it's fine once I start moving, even if my foot is off the gas.

oh, and yes, my EGR is hooked up, maybe it's cracked and needs to be replaced?
