what do you guys use to block off the nipples on the intake manifold, and elsewhere, after removing emisions. does anyone make caps that wont blow off under boost?

Try using the vaccum caps that they sell at the auto parts store and just put some RTV sealant in em and allow em to dry after you put em on.
