Suggestions - how to mount Sparco gas pedal?

Got a set of Sparco Stripe pedal covers for my 92 Talon. Clutch & brake pedals were no problem - removed the existing rubber covers & drilled holes in the plates so the Sparco plate could be affixed & then attached the pedal cover. Gas pedal is different - stock pedal is hard plastic/rubber unit attached to a rod via a spring assembly. No solid plate to drill & attach the Sparco plate to.

Only came up with 2 ideas - remove the rod & weld the Sparco plate to it or carve up the existing pedal so it's small enough to fit behind the Sparco plate but still retains the spring assembly & then attach the plate to it & then the pedal cover to the plate.

I'm sure someone must've encountered this before - any other ideas that might be easier or work better?

im rocking the Sparco Corsa pedals. i just drilled right into the plastic. i only used 2 bolts since the middle bolts were lining up with the pedal arm; but it's been holding perfectly for 5 months now..
