shuttering after exhaust mod. ECU adjusting? or another issue?

First off I'm brand new to DSM Tuners, so I'd like to say hey to everyone before I get into my issue.

A little helpful History:
I have a 97 GST Spyder that I bought a few months back. When I bought the car it was a terd but I was getting it for a really good price so thats cool. It came with the injen intake and a Greddy BOV already on it, so those weren't my doing but alright they are part of the deal. it also had a fuel/air gauge along with a boost gauge, neither of which were hooked up, they are now. They had used intake couplings on the turbo section and it had blown them out. that was the reason for the car being a terd. got all that fixed

On to my doing:
I decided that I would free up the exhaust a bit and got an old cat that was hollowed out and put it on it for a test pipe(no emissions here). at first test drive it seemed as quick or quicker, kinda hard to tell it was just a short test drive. The next day I took it to the car wash and also sprayed underneath the hood to clean up after an antifreeze leak. I tried to be careful and stayed away from the air filter. after leaving the car wash it I nailed it it would sputter or shutter pretty bad. I figured I wasn't as careful as i thought and I got some water on the filter. it started working itself back to it's good power again in a matter of 15 minutes. Keep in mind it only did it under boost. So the power is back but I have the CEL from the rear o2 sensor.

I ordered the spacer for the o2 sensor and sure enough no more cel. Not right away but shortly after the car began this same sputtering, shuttering, sorry for lack of terminology here only under boost. never not under boost. I rechecked for boost leaks, none were found.

All in all the car doesn't seem to have as much power as it did even when it's not shuttering under boost and I'm wondering does this have something to do with the rear o2 sensor? Or is it that it can spool up easier because the exhaust is freed up a bit and it's causing a fuel cut of some sort? is it plugs? (no one has them locally so they are going on order, i want the NGK's) or something totally different. I'm very sure i caused this problem as it didn't do it prior.

I searched this for a bit and I can't find the same issue. thanx in advance.

and let me add that it doesn't shutter every time under boost and the boost gauge reads boosts up to 14. sometimes when it's shuttering the air fuel gauge will go from rich to the stoich area of the gauge and sometimes not. Normally it reads rich under boost but it's not a wide band gauge so i don't know if that helps at all.
 
UPDATE:

The plugs came in today and thus far I don't have any sputtering anymore. I am now running the BPR6ES gapped at 28 and it's running fine
