When I installed both my fpr and fuel filter, I never cut the ss lines to size. Now that I am cleaning up my engine bay, I want to take the -an fitting off the ss line and cut it to size.

Can I do this? If so how do I get the an fitting off?
 
Yes most swivel type an fittings are re-useable, but first you need to make sure your an fittings are the re-useable type. If you can't tell , you better check the manufacturer and compare with their online catalog. To take them off/apart they simply unscrew. Use aluminum wrenches and vise inserts when disassembling, to prevent excessive scratching of the anodizing, or just put some electrical tape on your standard tools. Once disassembled you can just tape and cut a fresh end on the hose, at the correct length, and reassemble.
