I have been searching and searching for a how to on how to set-up a catch can. My spyder is a n/t, the reason I want a catch can is because oil is leaking out of the valve cover and going in to my intake tube. All the catch cans I have looked at have two inlets and a level some have breathers, some don't. What I want to do is block off the intake tube and put a hose from the valve cover to catch can but what do I do with the other inlet on the catch can?

You can use the catch can between the valve cover and the intake. If you want to completely block off the intake then get a catch can with a breather so you can connect both ports to the valve cover and your engine will still have a way to relieve all that pressure.

You just simply connect the other hose back to the intake if you have the catch can oil won't go back into it . Also make sure the catch can is baffled or you can stuff it with steel wool

Large amounts of blow-by on a NA engine is usually a sign of internal issues or a malfunctioning PCV. While a catch can will stop the oil from getting into the intake, it won't fix the problem. With that said, just run one line from the valve cover to the catch can and then the line from the catch can to anywhere. It's tricky on a boosted car because you only want vacuum in the catch can, no boost. But since yours is NA, anywhere is a vacuum source.
