Ok ive had wierd issues ive got a auto meter coolant temp gauge it says 160-180 i know thats normal. the stock gauge sits wher it should. if i go out under the hood the upper hose is hard really hard. should it be like this at this temp ?

The hoses will be hard due to the pressure in the coolant system. Thats how it works. So yes, the hoses will be firm and hot.
