This what my setup is going to look like:

howell bottom end long rod kit

howell top end kit

zex nitrous kit

greddy headers/ exhaust

my question is what cams should I go with?

what for crank hp will i get with a 75 shot?

dosen't look like your going turbo so i would say 10:5 forged pistons should be good, also forged rods which i see is already on your list. A 75 jet should give you 75 crank hp so about 65whp-ish (dont quote me on this)

depends on what you want. the 12's are supposedly made for nitrous, but ive heard people say they werent that big of a difference. i was gonna go wiht 12's, but i think i am going to go with 16's now. it might be a little less drivable, but it should still be good for the street. just dont get the 14's those are made for a turbo and have no overlap.

dont get crazy with compression. 11:0:1 is absolute top you can run on pump gas and even then you may have to add octane boost. 11:0:1 will run 93 octane or 94 octane gas, which is avaliable at pumps.

if your not going turbo just go with crowers replacement for the 264/272 combo. slowboy racing has em. plus you can actually find these

go to www.2gnt.com and look up a sticky (not sure which section its in, pretty sure its advanced tuning) and there's a thread there that is a sticky........read it until your eyes bleed.
