Mech temp gauge?

Im not sure what temp my car is running at and its got me very very worried, the upper rad hose becomes pretty hard.. The stock gauge iv come across as being useless so im looking for a mech temp gauge but i was wondering how the sender piece works or how it even measures the temp of the car? It comes with the nylon hose crap which really has me confused on how it works?
