flashing the ECU?

is it possible to re-map the stock NA ECU to change the stock fuel settings, AFR, and other stuff? I was thinking of going to a Dyno shop to see if they can do it. Do you have to remove the ECU to access it or is there a plug to access it? I'm thinking that I will have to remove it because our cars do not have a "plug-and-play" connection, right? anyways, any help will be appreciated.

You can do this if you have an EPROM ECU. It'll have to be socketed, and the easiest way is to have someone modify the stock ROM image and flash it to an EEPROM. If you don't have an EPROM ECU you're pretty much out of luck with flashing it.

There were some N/T 1G's that came with EPROM ECU's. EPROM simply designates how the ECU's operating code is stored - EPROMS store it on a chip that is seperate from the prcoessor. (EPROM = Electrically Programmable Read Only Memory).
 
Versus non-eprom ecu's where all of the programming information was store directly on the processor chip, making it un-moddable

There should be an "E" in one corner of the label. Other than that, you can just open the unit up and look for a rectangular chip on the lower right hand corner (if the wiring harness connectors are facing up) of the board. It'll have 14 pins on two opposing sides (known as a DIP (Dual Inline Pin) configuration).
