I'm getting ready to install my EMS, but i'm not sure if i want to run a maf or map/iat.
Living in Michigan,the weather sucks!
Which load setup will offer the most flexibility for drastic changes in weather?
Or will I constantly have to tune to adjust to the weather?

I have this same question, i'd rather bring back an old topic than make my own also :)

And do i have to buy MAFT to run GM 3' with AEM EMS?
So which system is recommended best? 400-500 hp goal here on an 60-1(LOL) stock longblock.

400-500 can be done on a safc.
EMS is good, but not easy to tune and has a steep learning curve.
The best option is dsmlink. ECMTuning, Inc.
Highest hp with dsmlink is over 1000hp, easy to use, inexpensive and has the best support and customer service out there.
There should be no further questions.

Well i happen to have obtained aem, does the gm maf can be used without a translator(or with, not sure if u have to or dont need it with aem) or just go speed density with no maf?

I am new to all this i confes, but i wont be the first or last to use this proven system

GM maf needs a translator with safc, dsmlink v3 lite or less. With full v3 you do not need a translator.
With AEM you run speed density and only speed density. That is how it works.

Why do you 'need' a gm maf anyway?

Speed density is the preferred method either way. The AEM uses and IAT sensor with a MAP sensor to derive mass flow. Boost leaks won't affect your AFR's, and you don't have a MAF (mostly the stocker) causing a pressure drop.
