I would like to first start off this post by saying yes I've searched the forums for an answer to my question and none of the posts answered it entirely.
Now for my question. What parts would need to be upgraded to run 8 lbs of boost on a rebuilt stock motor? I'm mainly asking about injectors, fuel pump, etc...

And if the injectors would need to be upgraded what would be a good size to go with?

You need to research ALOT more if your asking this question. Every motor will take a different amount of boost.
You will need something to tune with mostly! It also depends on what kind of gas you will be using. There are a ton of variables that you need to do research about...

Does it have to be a hahn kit? or would any kit work? I've ran on 91 octane since i got the car. I guess what my real question is would i have to upgrade the fuel pump and injectors just to run 8 lbs of boost? or can the stock parts handle it? also what computer work would have to be done? if any?

You WILL have to replace the fuel pump and install a rising rate FMU for any amount of boost (You will need around 90 psi under load and 50 psi at minimum of fuel pressure to boost 8 lbs). You can use the stock injectors just fine to around 5 psi of boost, I installed the 26lb injectors to achieve arount 8-9 lbs of boost on my stock 420a.

Here is the reference FMU most use: LINK

Hahn is the solid reference turbo kit because they have around 8 years of research into it. (someone already gave you the link for that one).
