I know where to get the flanges, but I don't know where to get the sheet metal or velocity stacks, tubing, or anything. Any help or directions are appreciated, thanks...
 
Are you going with round or square runners? If going with round just go buy some 2.5" pipe with a 1/8" wall thickness and just have the ends flared. Square runners will involve getting a sheet of 1/8" thick aluminum and cutting and bending them to shape. For your plenum it will depend on the style of plenum you want to go with but I am sure you can go to a metal shop and get a sheet of 1/8" thick aluminum. But unless you like welding a metal break will make the job easier and faster.
