I know it's a bit broad, but what type of engine or drivetrain upgrades or maintenance require removing the engine from the engine bay?

I'm putting together a plan, and I also want to paint the engine bay, so the motor will have to be removed to do it properly. I just want to know what else I should plan on doing while it's out.

As you pull the engine out take note of any broken bolts ( exhaust manifold for example ) and get the fixes done before re-install. It's much easier to put in a helicoil without the cramped spaces
 
What I'm in the process of doing and have done is removed all A/C lines, removed the stock fuel hard lines (the thin yellow line is the return line), removed the stock fuel filter (left circle), removed the stock fuel injector resistor pack (right circle) because I'm running a COP setup with a bypass plug (yellow dot), remove the sound deadener on the firewall and my emissions stuff has long been removed.

There's more you can do, depends on the seriousness and depth of your build.
