Toronto,
This is an odd one. :D

Whenever i shift into 2nd gear, there is notchiness. All the time, whenever the car is warm.

All other gears are fine.

BUT, i noticed that my 2nd gear is perfect, whenever i'm going up a incline, or hill. Doesn't have to be super steep, but more the better.

I checked the mounts, all bolts, everything is tight and good. Nothing budges when i reef on it with a crowbar.

Any ideas on what/how to check on next?

you ever thought that when you shift going up hill you might be pulling the shifter back at a little different of an angle.

also the speed of your in your transmission slows down quicker going up a hill when you push the clutch in maybe it synching up quicker/better

yeah, i agree. i think it would either be a slightly different angle of shifting, or most likely, when you are going up hill, the revs drop faster than you are normally shifting and it doesn't go in smoothly, or it throws the syncho off a little bit cause you are jumping so many revs. try shifting faster. also take the boot off around the shifter, and make sure nothing is just rolling in the way or something, sounds like you already looked though. just try shifting faster or pushing hte clutch allll the way to the floor, then match revs to what you usually shift at going on flat ground and then shift....or if its the syncho, double clutch, maybe.
