Running warm while driving without thermostat

Okay guys, got another odd coolant problem. Recently the O ring on my water pipe going into the pump failed. I fixed everything and now I've been having cooling problems. I Run one cooling fan that works fine. I have Link, the fan cuts on a 205 and cuts back off at 180 ish. Drove the car a few days to work after the work and everytime I would let it cool off I would top off the coolant some to compensate for the air from when it got drained. but now, When i check the fluid level, it's all the way filled and I can't add any. If I start the car and let it idle, It will sit and cycle the fans and run a perfect steady temp. I can free rev, even hit Antilag and everything is gravy. I take off down the road and it does just fine, but then slowly the temps will begin to rise to about 3/4 of the way up the gauge with about a 239 degree reading. Fan running. If I turn the heat on It will slowly work its way down-( but not as such if there was air, it doesn't cool it off very fast) After running warm for a few mins it will randomly cool back off. Making me think Thermostat. So I figured its warm out, ill pull it out and run without for troubleshooting. So now the thermo is out and at first it did fine. But then, the exact same thing started happening. Running warm for a few, then cooling. Weird. And to throw in another loophole, when it was like 40f out the other night and i had the heat on low, the car actually went below operating temp (which you would expect on a healthy cooling system car without a thermo on a cold night).


hasn't done that since, Coolant level hasn't dropped since then.

but why is it still randomly warming up under normal driving conditions. And if i'm accelerating its no different.




No white smoke
No leaks that I can see, hear, or find.
Pressure stays on hoses for pretty long time after shut down of motor.

Nothing has changed at all since last summer when the cars cooling system worked great. no airflow differences.

So what could cause this?

This car sat for awhile before i bought it with an open cooling system. theres some rust in there, could be radiator be getting stopped up? but the water in my upper hose is ROLLIN! especially when i speed the motor up.


Any ideas? things I should check?
I even got a ASE tech stumped.
 
The thermostat is there for a reason, leave it in there. It helps keep coolant in the radiator to cool it off before returning to the engine. If it's gone, the coolant freeflows through the radiator and never has a chance to dissipate heat. Secondly, do you have 1 or 2 fans? I would suspect the water is moving too fast to lose any heat in the radiator.
