Rim help ###

Okay I'm in need of some new rims and I was thinking 18 x 7's or 18x7.5's but I dont want the rim sticking out the side so would these be alright? what offset should I get? Also would 18's reduce my torque or would I should I stick to like 17x7's even though 18's look sick. The offset always screws me up I have no idea what size to get I just don't want my rims wider than my car. Help please!

No im simply asking would 18x7.5's be to wide and what offset would I need to make it so it doesnt go past the fender wall / side of my car
