Possible Headgasket?

Ok My sysmptoms are:

Idle flys up to 2000 rpms down to 1.5 stays there for a bit then stays at .75 for a bit.. and fluctuates.

I had the car die for the first time since I put the new motor in when I started it up and let go of the clutch.. idle dropped down to 0 and died.. hasnt done it since.

New Water Pump
New Thermostat
No leaks as far as I can tell
New Slim Fans both work perfect.. no fmic blocking my way
New Sparkplugs and wires

Car still overheats at idle.. but going on the highway its all good..

Sometimes stalls when I get into the peddle a bit.. feels like fuel cut.. could be unrelated..

I see an oil leak of some sort.. Might be between the block and head.. but then again it might be my valve cover gasket because I replaced it.. and stripped some bolts.. so Ill have to wipe it off and see where thats coming from..

any thoughts?

I made it to California from Missouri and it was kind of having these problems before I left.. But if it was a headgasket.. I figured 900 miles a day with a 6000 mile trip the way we went would have blown the engine? It overheated a little at the Grand Canyon on our way back but I filled it with coolant and it was all good.. im also wondering if your supposed to change the coolant out every so often or fill it up every so often.. or is it like oil and just sits there? I do regular 3000 mile oil checks.. with penzoil.. I know flame on.. but seems to be ok.. I noticed when I have been changing oil it has been a lot less thick lately.. maybe its just me idk.. Someone more knowledgeable should give me some tips :). Im 19 still learning :D.

if it was a head gasket you would know by either the exhaust smoke or the oil and coolant would mix and look like chocolate milk. if you havnt already checked some other posts on here for over heating problems it would be a good idea, they go over everything you would need to know
