odd temp problem

So my temp gauge after my car warms up sitsi nthe middle ( normal) but mainly in low gears because of quicker spooling when my car started to boost the temp drops and I don't mean alittle I mean it goes way down but after i blow off and stop accelerating it goes back to normal .... so new thermo ? or other problem ?
 
I have the opposite problem with my TSI. After the car warms and I slam the throttle she almost overheats, I checked the fans and only one is working. Any advice on what's causing it not to work?
I would start by checking the wiring. You can test the fan itself by using two jumper wires. I was having a problem on my 1g with the fan switch so I hardwired them in to the ac switch. I think if you have dsmlink you can enable the fans to run constantly. If one is working I couldn't see it overheating to bad.
