the little tube coming off this near the original factory charcoal canister (also, the black hose next to it is not hooked up to anything)

i have some more for tomorrow!

The metal tubing on the firewall is just a hard line that would route to the other end of the engine bay. If there has been a lot of work done in there then a lot of those will be bypassed because it's more hassle trying to keep track of the metal lines than it is just to route new rubber vac lines directly.

The little double ends are solenoids and are emissions related, as knochgoon stated.

1a) Fuel tank vent (goes to tank. Fuel will squirt from there if you overfill your tank!)
1b) Evaporator drain tube (distilled water will drip from there if you fix your A/C)
2) possibly knock sensor plug (You're going to want that hooked up!)
3) EGR and purge solenoids. (I don't use them either)

Ps. Is that one of those fuel filtrers that has a screen with holes big enough for sand to pass through? I would throw that out.
