Short answer is the O2 Sensor. STFT is short Term Fuel Trims (e.g. real-time feedback from the O2 Sensor) and LTFT is Long Term Fuel Trims (e.g. stored +/-adjustments to fuel delivery based on STFT feedback over time).

Those values aren't "captured". Rather, they are calculated by the ECU.

But yeah grabbing a manual will be great. A decent tune requires you to have proper knowledge of fuel trims.
