recommendations on logging software and engine-management/fuel-controller systems?

In my opinion, skip the SAFC unit as you will most likely out grow it quickly, and for just a little more, you can set yourself up with an EPROM ECU and a burned EPROM chip. You should be able to search the forum for this information to gain additional knowledge to educate you on the best choice to make for your needs.

MMcD is only for 1G DSM's. For 2G's you have fewer options unfortunately. EVOSCAN or DSMLink are the best options for a laptop. Pocketlogger used to sell a generic OBDII logger for the PDA, but I don't think they do anymore.
As far as engine management, the first thing you should find out is if your car came with the rare 1995 EPROM ECU:
