I was wondering if using a lower rated thermostat would help with knock since it's creating a cooler engine? Any thoughts?
 
In theory it should help a bit since your engine would be a bit cooler, but not many people have seen any good outcomes from doing this.

Knock its an usual side effect of high temp air temperatures charges, so either lower your boost pressure or a bigger intercooler is your best solution. this is applied when high temps is your problem, but knock could be caused by a few other facts, and sometimes its phantom knock.

So to answer your question, the thermostat wouldn't change much on your knock issue.
