]Just got a gasket kit in and I have some questions about it. When I took the head off it only had one gasket on the exhaust manifold, the little sheet metal one. The kit came with one with little "dimples" on it too. Which do I use or both? The other picture is of the gaskets that look like they are made of cardboard. Enlighten me please.

Ok, the ones that look like "carboard" are intake manifold, TB, EGR ect... use the one that matches your intake manifold (smaller ports if you have your 2g head) and if you don't take the rest of the stuff off don't worry about using the new gaskets unless the old ones are leaking. I would suggest using some gasket sealing compound on the intake gasket. As for the exhaust I would use the multi layer steel one not the "dimpled" one. Use the turbo gaskets as needed, the one with 2 holes in it is for an NA manifold/downpipe you will not need it.
