I recently purchased a 2g exhaust manifold with the collector taken out and it has some mild port work.
My question is will I have a problem with back pressure on a stock engine.
Also will a 2.5 exhaust be enough on my car. (91 Talon Tsi)

You don't need back pressure IMO. That is just a myth that rednecks at exhaust shops tell you. The 2G manifold will not hurt you at all. A 2.5" exhaust will work well, but if you are going to spend the money I wold just start off w/ a 3" exhaust.
