What are the cons of having a rebuilt head without valve stem seals besides smoking in between shifts? Any performance loss or harm to the motor?

. I've posted a few times about it trying to figure out what it is. Now i'm waiting on this shop to check whats wrong with it and their almost 2 hours away. I'm not very happy right now especially learning about the head

1.) Pay a lawyer to write them a letter about how THEY are going to make your car whole, AT THEIR EXPENSE by a shop OF YOUR CHOOSING.
2.)SUE their slag asses until their doors close.
I can't even comprehend a shop letting a car out the door without valve seals.
