I picked up a tie rod end from autozone and I noticed instead of having a cotter pin it has a stop nut on it. (the nut has a plastic ring on the inside top of the threads that apparently holds the nut in place) This thing just does not seem to be as good or as trustworthy as one with a cotter pin. Anyone have any feelings on something like this?

Actually yeah it has, when I replaced it right when I got the car it was at the very end of the threads.
