when i push my gas pedal down hard my safc doesnt show 100% throttle usually around 80-85 unless I push the pedal like im trying to put it into the engine bay...is there anyway of adjusting the pedal or throttle cable so that i dont have to try as hard to get the response I am looking for?

on the back of your intake manifold there is a bracket that adjusts and holds the throttle cable... 2 12mm bolts I think... loosen those and adjust the throttle cable tighter

You might want to see if it is something electronic first. If your cable were that loose it'd probably fall off. Get a friend to step on the throttle with the car off. Have them push it all the way down and then try to twist the throttle open more. If it can't open any further the problem is likely a poorly adjusted or broken throttle position sensor. It should read 10% at idle and 100% at full throttle. I'm not familiar with SAFCII setups but if you have a data logger it will tell you your throttle position too.

The first thing to check would be if your floormat or any other objects aren't allowing your pedal to go down all the way.

Then I would check the slack in the throttle cable between the adjusting bracket bolted to the manifold (10mm heads) and the throttle body. If it is loose take up the slack and see where that gets you. On an AFC the throttle posistion will be at zero at idle and via a logger it should be 10%.

Here's the vfaq on TPS adjustment, make sure its in spec also.
