Running cold after thermostat

just replaced my thermostat because my coolant was overflowing in the reservoir, so I suspected it faulty. After I replaced it, topped off coolant, drove around 10 miles including hopping on i75, WOT to cruise at 80, and the temp gauge stayed cold the whole time. Its about 58 degrees, the thermostat I replaced was a stant 195 degree I think, installed spring towards engine, bypass valve 12 oclock.

Now I was leaking a little at the ends of my upper hose but it was do to the clamps not being tight enough (no more leaking after my 10 mile test run)

Another thing, in my reservoir, this is 420a, the hose that attaches to the reservoir cap and travels into the reservoir was not fully reaching the bottom of the tank, could this cause overflowing? (I made the hose reach the bottom of the tank while I was changing the thermostat)

quick help would be nice I have to make 150 mile trip tmr, which is why I replaced thermo so late at night.

Wait, isn't overflowing cause by a bad radiator cap. I had my fair shares of problems with the cooling system. The rad cap is weak and pressure is making it retract back into the reservoir.
And the hose reaching the bottom has nothing to do with it.
 
If the gauge isn't moving than you likely knocked the plug for the sensor loose changing the thermostat, or damaged the sensor.
 
the sensor is on the thermostat housing/coolant inlet/outlet housing. Its a little brass piece with a 2 pin connector.

i found it and sure enough the stiff pos broke off but i got it taken care of, and the new rad cap took care of the overflow issue, thanks guys, went on my trip and back with no issue...

except one thing did happen. I don't know how to explain this enough but while driving with my lights on with the instrument panel lit up, i noticed that the right half of just the of the speedometer (420a) became dim, now as im cruising a 80 and just happen to slow down maybe to 70, i see it light up again fine. Next thing you know tap the gas cruising back 80, damn thing goes off, im ocd so i wanna punch it now. So now im trying to fk with it thinking my speed is affecting it, i later banged the console and it turned on so i decided to label it intermittent, and hopefully not an electrical issue. When i banged once funny the climate control lights lit up which i never knew i had LOL...

So what do you guys think? and what would be the 1st thing to do to start my diagnosis?

sorry for the double post but i have an update

So since i replaced the thermostat and radiator cap, and took care of my broken temp sensor, my 150 mile trip 150 there 150 back, went well, no issues even in 5oclock big city traffic. but today, i drove the SOB to 5 miles work and it was fine, now driving home i look down to see my gauge higher than normal and sure enough its getting fkin HOT, don't see any leaks, but my reservoir tank has a little less than it did before, was full now half full.

Now i've had a car overheat on me before, and there was tons of steam or smoke w.e it is. Here the needle going home was almost 12oclock, pop the hood to see the fks going on and it wasn't as hot or steamy as i expected, i was messing with the temp sensor, i was wondering that if it can be too sensitive detecting temps? i did not replace stiff old POS wire like i should have, just the contact clip for it

After you replaced all these parts and added the coolant mixture, did you bleed the system? Also the tube in the reservoir, is it long enough to be full submerged in liquid to avoid drawing air into system?
