Oil Cooler Question

Since I'd rather not mix water with my oil and chance it with the later oil filter housing, my question is this: Can I take that water cooler 'sandwich' off and replace it with a sandwich plate to use for an external air cooler and still run that same filter housing?
 
i'm not sure if it is possible but if you do you will need 90 style oil filter housing and oil cooler.
 
is an oil cooler really necessary. I live in new england and this will only be a summer car.
 
An oil cooler is not necessary, you are running a pretty stock car without trying to road race correct? Just put back on a stock oil filter housing.
