Here are the basics:

Do a 3rd gear pull from 2k rpm to redline. This is risky, because redline is ~95mph.

Log RPM, timing advance, and O2 1 Bank 1 (not sure what it's called in Tunerstein, but it's your front O2 sensor).

If it's your first log, also record TPS to make sure your ECU is seeing full throttle.

I'm not sure where your evo3 hits full boost, but let's say it's 3500rpm.

Timing:
Your timing should start out at around 20*. It may be 18* or so, depending on what RPM you start your log, the outside air temperature, and altitude.

As your revs go up, your timing should as well until the turbo starts to spool. The timing advance will top out and then start to drop quickly. When the turbo has hit full boost, your timing will be at the minimum you should see during the log. I don't know what boost you're running, but if you're at or above 15psi, your timing will dip to below 10* advance.

From here on out, your timing should increase smoothly to redline. Any dips after that first minimum indicate knock. There is a formula that the ECU uses, and you can get a good idea of how many knock counts you're getting based on how much timing is being pulled. I'm too lazy right now to find a link for the formula, but if you're seeing any dips in timing, you have too much knock.

O2v:
The narrowband O2 sensor on these cars isn't a good indicator of AFR, but it can tell you when you're leaning out. They vary from car to car, but most see around 0.9v. It can dip down to 0.85v, but remember that all cars are different. If you start out at 2k rpm and 0.92v, but it drops to 0.3v by redline, you're leaning out, and you need to find and fix the problem.

TPS:
The throttle position should read in the high 90% range. If you floor it and only get 80%TPS, you need to fix that, because the ECU treats things differently when it thinks the motor is at WOT. I forget the exact number, but I believe it's either 90% or 95%; anything above that is treated as WOT.

After you've verified that you're getting the proper TPS at WOT, there's no need to log it anymore, and you can get more samples per second on the other three values by freeing up the bandwidth. However, if you tinker with the TB or cables or pedals, you might want to re-check TPS at WOT.
