How far is too far when surfacing head?

Today I decided to unpackage my head that came with my stroker engine setup I bought from a private person. The engine has not been assembled or messed with since returned from the shop. The shop bored the block .040 over and ported and surfaced the head.

I haven't taken any pics yet but I honestly think the head was surfaced too much. The surface of the head seems to be flush with the very beginning of the valve seat. I have no valves in it yet but I figured I'd put a valve in it tonight and see if the valve is flush with the surface of the head.

My question is how far is too far? What would be too much for surfacing a head on a 4g63 ?
 
warpage in the haynes says .008 and standard .002, i had mine done .006 and it has the valves in it, and looks clean. You should be ok.
 
Do I check just the combustion chamber to tell how far it has been surfaced? What's the best way to measure this?
 
Yeah, FSM says the limit is .008" combined between the block and the head. Says the head height is 5.193-5.201, I'm guessing that's from the machined surface that the VC gasket sits on to the bottom of the head, but that's just a guess. I'm guessing if it's under 5.193 you have problems, otherwise you're probably ok?
