i am doing a engine bay shave and wire/brake line tuck and i wanted to know what is the best thing to use to clean it all up, all the grease. and maybe some thing that would strip the old paint.

The clean all the grease go pick up a gallon of purple power from the part store or walmart. That is the best thing on the market and it works amazing. As for stripping the paint, you can use a chemical stripper, or sand it. The chemical stripper is very toxic and i would try to avoid it. I would just scuff the original paint, spray sealer than spray paint on it.
 
Purple power or any degreaser and a pressure washer. Or just a hose and some elbow grease ;)
 
If you're trying to get rid of the paint, as well as clean the bay up. I suggest you use a big old angle grinder with a heavy duty wire wheel. Use some simple green and a power washer and you're good to go. :thumb:
 
Another really thing to use is aircraft paint striper If your going to repaint just spray it on. (where gloves) watch it bubble and spray it or peel your paint off.
 
As everyone else has said, Purple Power works good. Make sure to get the spray bottle AND the gallon jug. You'll thank me later. You might also want to grab some of the CHEAP WALMART brand engine degreaser. I had some laying around so I used that on top of the PP on my Colt. Here are the pictures before and after. OH: do not forget to get some brushes to scrub. You can find some in WALMART either in the floor cleaning section, or in plumbing.

As for cleaning and/or removing the paint/rust; I used a sand blaster and about two and 3/4 bag of media (or sand). It worked out pretty well.

"Super clean" hands down best cleaner EVER!! It makes purple power, simple green and gunk look like rookies. Best bet is to get a gallon. You'll be wanting to clean everything once you see how it bad@ss it is, i know i did LOL
 
Im doing the same with my car. Iv just been using a stripping wheel.. ill post a pic.. it rips right through both colors.. it use to be red and got painted black
