coolant temp sensor reads 312 or nothing!

hey guys im on the last stretch of my project and were having serious cts problems. i have the correct wires i know that much. i have tried 4 different sensors. When i connect the cts with the 2 wires i get a range between -2 and positive 27 repeating rapidly back and forth. This also causes the car to flood and not start. THe only way i can get it to start is if i take the two wires and connect them to a ground that i ran off the intake manifold and it will start. the datalogger then tells me at this point that the temp is 312 degress and it runs somewhat fine. Any ideas

The way the wires are run, they can break easily- make sure the wires going to the sensor are in good shape too.
 
I had that issue when we put my motor in and it was the dsmlink popping out of the socket in the ecu or at least pushing it down into the socket cured the issue. We also had some ground issues you may wanna check it out.
 
so i went and put in my old ecu. now the car still runs the same(like crap) full rich but the temp now reads non negative numbers like 20-40 ish it really doesnt go any higher. and my logger is def in farenhight. so what the hell to do now?
