205 tire on a 7 inch wide rim?

Just got new 205 tires for my stockers and bumped into a deal for rota slipstreams so I got them. Could I mount my new tires on the rotas even though they are 1 inch deeper than my stockers? Also would it affect the performance to have a stock size tire on a wider rim?
 
I haven't done it either but in case you don't find anyone who has used that combination, here are a couple factoids for you:

1. 205's will perform better on the 7-inch wheel. The stock 6-inch wheel is rather narrow for that width of tire.
2. A 7-inch wheel is well within fitment specs for any brand 205/55/16 that I know of.
