Wont start and when it does the throtte is very responsive.

I got the car wont start today. It's 5* but it was starting yesterday with it being a little warm. I have a data logger and the TPS it doing the correct percentages but do I need to test it? Usually it is a little hard to start.

Now the Throttle, when it is running I can floor it and it will take about 30 to get up to about 5000rpm,

All of this started happening after I changed the head gasket, Is there anything I could be over looking
 
Sounds like your coolant temp sensor is dieing. Just like the other 1000 posts of "OMG it got cold and now my car is hard to start!1".
 
When you changed the headgasket, how much of the intake did you disassemble? It sounds like you may have overlooked a vac line or something similarly easy to miss.

Are you using the GM MAF in blowthrough? Still on stock injectors?

What is your ignition advance at idle? Can you post a log for us?
