I'm planning on upgrading my stock brakes to Gsx big brakes on my 91 talon. I was wondering when i'm changing out my old brake system do i have to switch out my proportioning valve? If I do, is that going to be easy or hard?

No, you don't need to switch the proportioning valve. The only thing I would suggest would be to swap the master cylinder and some SS brake lines.
