General Seaking advice from tuners. What would you do?

Sorry for the long post but it has been a while since the last time I was on here. Mostly do to the change in carer and a move from state to state, then the car was down for maintenance the last couple of months. I have been having an issue with my car that I need some advice with. So to start with, the pertinent info. Fully built motor internals rods, pistons, cometic head gasket, BC 272 cams, ported/polished head exhaust mani and IM, E3 throttle body, custom IC piping, blitz BOV, E316g turbo, custom exhaust, 3 inch intake cone air filter, EVO8 MAF, Evo8 fuel pump, and to top it off Modified evo8 injectors (yes modified, IIRC #48 drill bit on them and sent them to have them flow tested, came back at 660cc each).

Now most of the mods were done all at once (including the injector mod) and I was using an EVO8 ecu at that time. However I kept having issues with my car killing ignition drivers on the ECU. I went thru 3 ECUs, even tried using EVO coils on my motor and still killed an ECU. Swapped back to an Eclipse ECU and have had no issues since. After I swapped over to the DSM ECU the only modds I have done is install cams, ever since the ECU swap I have been chasing a troublesome issue.

WOT isn't an issue, cruising is OK. My problem is low throttle, mostly in parking lots. I feel this is mainly to do with my MAF and injector settings. SOMETIMES, not all the time when the RPM and engine load are just right my car will run super rich for a few seconds. So rich it almost completely dies out. And every now and then it will do the complete opposite and run super lean. Biggest problem is it doesn't do this all the time. Pull into a parking lot try and find a spot, down shift to first to turn the corner let your foot off the clutch and give it a little gas, no issue. Do it the second time and BOOM AFR's are in the low 10:1 and the car is trying to stall out or it is super lean and spitting.....

I know I need to get my MAF and injector setting straight and I have a feeling it maybe affecting my WOT and cruse tunes but how would I go about doing that with so many mods. Do I start with stock injectors and tune the airflow map then put my modded injectors back in and adjust, or take my best guess on the injectors, tune my airflow to a good AFR??? Another question, when doing this process should I adjust MAF and injectors until my WB closely matches the AFR map when in open loop or adjust while in close loop until fuel correction is close to 0???? Also, I am planning on bigger injectors and turbo upgrade in the future, should I go ahead and add them now? It isn't like I don't already have issues to deal with in this area...

Any help in this would be greatly appreciated.
