Coolant temps high no clue why any ideas?

Ok my stock temp gauge is not working. I have an aftermarket gauge in the free spot right by the t-stat hosuing. That gauge will say 210. If i check the aem and read it directly its at 190. The other issue that the temp keeps going up. I have a 160 t-stat two spal fans one pushing and one pulling. i also have an aftermarket radator. its alum. i can not figure out why its doing this. So im wondering what everyone else sees for temps. Also on a side note i lost the spring and ball out of my boost control. i should be able to go to the hardware store and find somthing that fits and call it a day right ?
 
yup to the mbc and have you checked the rad cap... If they go bad then you will have high temps
