What would potentially happen if this was unplugged, your alt would take a shit right? It would overcharge or undercharge your system and kill your alt/ overcharge your batt. Am I right in my assumptions?
 
I believe that nothing would happen. The regulators job is to "excite" the fields (windings) in the alternator. By doing this it creates a magnetic field. Without this field that alternator should produce zero volts (may produce some small amount, but should have no real amps to speak of).
And if I might ask what are you looking to do, disable the alternator?
 
when you unplug your alternator half your dash lights up because some of your vital components are not getting the right voltage they need to operate. so no dont do it
